The Brasa III builds live fire permanently into an outdoor kitchen. It drops into a countertop cutout in a masonry or custom island, leaving a clean stainless perimeter at counter level and the working machinery — firebox, grate, elevation wheel — standing above it.
Below the counter sits a deep firebox lined with refractory firebrick. Brick holds and returns heat the way a hearth does, rather than shedding it through steel, so the coal bed stays hot and even through a long cook. Hardwood or lump charcoal burns inside it. A cast wheel on the right-hand mast raises and lowers the grate over the coals, putting the sear entirely under the cook's hand.

The elevation system
A hand crank drives the grate up and down a toothed rack — the defining mechanism of Santa Maria cooking. No burners, no settings, no flame tamers. Heat is managed by the fuel bed and by height, which is exactly why the flavor is different.
How it installs
The Brasa III mounts much like an apron-front sink, and it needs two openings rather than one. A wide stainless flange rests flush on the countertop while the firebox drops below into the island. The island's front face is also cut away, so the grill's stainless front panel and base skirt sit exposed on the face of the counter — that opening carries the air intake and ash access, and it is not optional.
Give your builder both dimensions before the island goes up: the countertop cutout and the front face opening. Because this unit is built into permanent construction, we strongly recommend confirming your island plan with us before ordering — the 24-hour cancellation window is short relative to a masonry build.
