Sear hard and fast, then lift away and let a large cut come slowly to temperature. The adjustment takes seconds, and it never leaves your hands.

Built entirely from 304 stainless steel with 838.5 square inches of cooking surface, the Brasa II carries a fire deep enough to hold through a long service. It rolls on heavy locking casters, so it can be staged where people are gathered and rolled back when the evening is over.

The elevation system
