Product Description

The Brasa III builds live fire permanently into an outdoor kitchen. It drops into a countertop cutout in a masonry or custom island, leaving a clean stainless perimeter at counter level and the working machinery — firebox, grate, elevation wheel — standing above it.

Below the counter sits a deep firebox lined with refractory firebrick. Brick holds and returns heat the way a hearth does, rather than shedding it through steel, so the coal bed stays hot and even through a long cook. Hardwood or lump charcoal burns inside it. A cast wheel on the right-hand mast raises and lowers the grate over the coals, putting the sear entirely under the cook's hand.

Made to order. Cancel free within 48 hours — any reason, full refund, no fee. After 48 hours your order is released to the manufacturer and cannot be cancelled or returned. Freight damage must be reported within 48 hours of delivery. View our full shipping & returns policy.

The elevation system

A hand crank drives the grate up and down a toothed rack — the defining mechanism of Santa Maria cooking. No burners, no settings, no flame tamers. Heat is managed by the fuel bed and by height, which is exactly why the flavor is different.

How it installs

The Brasa III drops into a cutout in a masonry or custom island. A stainless flange rests flush on the countertop while the firebox sits below, inside the island.

Island cutout: 32.5" W × 22.5" D × 11" H.

Overall dimensions are 37.5" W × 33" D × 56.25" H, measured with the elevation mast at full height.

Give your builder the cutout dimensions before the island goes up, and confirm final clearances against the owner's manual. Because this unit is built into permanent construction, we recommend confirming your island plan with us before ordering — the 48-hour cancellation window is short relative to a masonry build.

Frequently Asked Questions

Does it run on gas?
No. The Brasa III burns hardwood or lump charcoal only. Heat is controlled by the fuel bed and by raising or lowering the grate.

What does my builder need to cut?
One cutout in the island counter: 32.5" wide × 22.5" deep × 11" high. Confirm final clearances against the owner's manual before construction begins, and call us if you want us to review your island plan.

Can I cancel or change my order?
Within 48 hours, yes — free, any reason, full refund. We hold every made-to-order piece a full 48 hours before releasing it to the manufacturer so this window is real. After that your order is in production and cannot be cancelled or returned. Given that this unit is built into permanent construction, call us before ordering.

How long until it arrives?
Production takes 2–4 weeks, followed by 1–2 weeks of freight transit — approximately 3–6 weeks total from order to delivery.
